In the assignment file we are told to make three Instagram stories. Do we have to use text in stories or graphics i.e photos?

You must fulfill all the requirements of the file. You can use text, images, GIf and videos.

One story should be related to store promotion e.g. “The Biggest Sale of the Year”. 
Create a poll comparing two products of the store in the second story.
Create the third story using “create feature” of Instagram story i.e. GIF, Shoutouts, Ask a Question etc. 

It’s your task to complete these steps. You can research to complete these tasks.

You need to convert your personal account into the business account and then work on your assignment. Instagram is an app designed especially for smartphones and that is why some of its features are not available on the browser. You can create a personal profile on a computer but you need to have a smartphone if you want to switch it to a business account.

To switch your profile to a professional account:

Go to your profile and tap in the upper right corner.
Tap Settings.
Tap Account.
Tap Switch to Professional Account.
Tap Business.
If you'd like, you can follow the steps to connect your professional account to a Facebook Page associated with your business. This step is optional, and will make it easier to use all of the features available for businesses. At this time, only one Facebook Page can be connected to your professional account.
Add details, like your business category and contact information.
Tap Done.

What does this means in Exercise 1. c. Create the third story using “create feature” of Instagram story i.e. GIF, Shutouts, Ask a Question etc.

You are supposed to create a new Instagram account, for doing so you have to use your mobile phone to access the Instagram app, as it’s easier for you to create an Instagram account from a mobile app (explained and mentioned in video lessons). After creating a new account and performing given tasks, take screenshots of those steps.

Select a video.
If you haven’t selected the language for a video, you’ll be asked to choose the language and Confirm.

You have the option to select your language and location on YouTube on your computer and mobile web, and the option to select your location on the YouTube mobile app. Language settings change the text that appears.

You don’t have to run paid ads to solve Hands-on Exercise. This Exercise is related to Instagram stories. Follow all the tasks mentioned in the exercise.

I just want to know that the videos we are watching remain or will the be removed after the completion of the course or they will be always here in our DigiSkills accounts ??

Videos will be available after the end of the batch. We suggest you please watch all the videos before the end of the batch for better learning and completing your course successfully.
